Rosemary Potatoes

Well, after a crazy month and a half of final papers, grading, and driving across the country to visit family, I'm back! I've actually done a good amount of cooking during that time, just haven't had a spare moment to post anything. These potatoes are super easy to throw together and taste delicious - the perfect side-dish for many different dinners!

Rosemary Potatoes
Adapted from Betty Crocker "Country Cooking"
4 servings

Ingredients:
1 1/3 lbs potatoes
1 onion, finely chopped
2 tbsp olive oil
2 tsp dried rosemary leaves
1/4 tsp dried thyme leaves
1/4 tsp salt
1/8 tsp ground black pepper

1. Preheat oven to 450F degrees.

2. Spray baking dish with non-stick cooking spray.

3. Cut potatoes into 1-inch pieces.

4. Mix onion, oil, rosemary, thyme, salt, and pepper in medium bowl.

5. Add potatoes and toss to coat.

6. Spread potatoes in single layer in pan.

7. Bake uncovered 20-25 minutes, turning occasionally, until potatoes are light brown and tender when pierced with a fork.

 8. Enjoy!
