Applesauce Cake

Applesauce Cake
Adapted from Betty Crocker "Baking Basics"
15 servings

Ingredients:
2 1/2 cups all-purpose flour
1 1/2 cups applesauce
1 1/4 cups granulated sugar
1/2 cup unsalted butter (8 tbsp), room temperature
1/2 cup water
1 1/2 tsp baking soda
1 1/2 tsp salt
3/4 tsp ground cinnamon
1/2 tsp ground cloves
1/2 tsp ground allspice
1/4 tsp baking powder
2 eggs
Vanilla Buttercream Frosting

1. Preheat oven to 350F degrees. Spray the bottom and sides of a 13x9 inch pan with cooking spray.

2. In a large bowl beat all ingredients together until well combined, stopping several times to make sure to scrape the sides of the bowl.

3. Pour batter into pan, making sure it spreads evenly and is smooth on top.

4. The original recipe calls for the cake to be baked for 45-50 minutes, but mine was done in about 25 minutes, so you might want to check it almost halfway through with a toothpick to see how done it really is. When done a toothpick inserted in the center should come out clean.

5. Cool completely in pan on a cooling rack, at least for one hour before frosting.

6. Once cool, frost the cake.
